Sweet potato brownie in a mug
So I saw a recipe for sweet potato brownies. It intrigued me. Yet I didn’t want to make a whole pan of it. So I adjusted and tweaked. Then tweaked some more.
NOTES : I used leftover (from making pancakes) canned sweet potato which has had the liquid drained off.
2 tablespoons mashed sweet potato
1 heaping tablespoon brown sugar
1 heaping tablespoon cocoa powder
2 tablespoons flour
1/8 teaspoon baking powder
cinnamon — to taste
1 tablespoon chocolate chips — optional
1 tablespoon oil
3 tablespoons milk
1/4 teaspoon vanilla
1 tablespoon nut butter — optional
(I mash the sweet potato in the mug)
Mix dry ingredients including chocolate chips if using.
Except for the nut butter, add in all the wet ingredients (including sweet potato if not already in the cup). Stir well making sure everything has been incorporated.
Add nut butter to top of batter. It may sink and that’s ok. Microwave for 90 seconds. (Microwaves vary but this seems to be the average time.) Top should be dry and cakey looking.
Eat while warm. There is no flavor from the sweet potato that I noticed. Only the yummy flavor of chocolate that seems…deepened some how.”
