Fruit Muffin in a Mug

We make this with frozen blueberries but any fruit should work.

2 tablespoons flour
2 tablespoons wheat flour (or 2 tablespoons of regular flour)
1 tablespoon brown sugar
1/4 teaspoon baking powder
dash salt
pinch cinnamon
1 1/2 teaspoons olive oil (or 1/2 tablespoon of butter)
2 drops vanilla — optional
2 tablespoons milk
2 tablespoons fruit, fresh or frozen

In a regular size, microwave-safe mug (as opposed to a large mug), stir together dry ingredients.

Add the wet ingredients and fruit. Stir until combined. Batter should be thick. If too thick, add a little more milk.

Microwave 90 seconds or until top looks dry. (Times may vary.)
