Recipe: Coffee Cake in a mug

Yesterday was a really bad day for me.  It started out bad and mentally only got worse.  It was one of those days where I felt like a convenience and easily expendable.  The only one that would seriously miss me is my son, ’cause he is still at that age where he needs his mother.  On days like yesterday, he is the only thing that keeps me from doing something stupid…well that and a belief that suicide is only a reset button ‘causing you to come and live a similar life…there are just somethings I do not want to live through again.  So I cry, tell myself that depression lies (even hormonally caused depression), pray and cry myself to sleep, cause tomorrow is always a new day.

My son loves to have this for breakfast.  He asks for it often enough that it drives me crazy.  If you don’t have wheat flour, substitute regular flour.  I don’t remember which website I got the original recipe, but I did make a few changes and additions.

Coffee Cake in a Mug

1 tablespoon butter
2 tablespoons applesauce — heaping
1/8 teaspoon vanilla
2 tablespoons flour
1 tablespoon dried fruit — optional
2 tablespoons wheat flour
1/8 teaspoon baking powder

1 tablespoon butter
2 tablespoons oats
1 tablespoon brown sugar
1/4 teaspoon cinnamon
1 tablespoon chopped nuts — optional

In a mug, melt butter in microwave (about 15 seconds). Stir in applesauce and vanilla. Then add flour and baking powder, stirring until just combined. Smooth the batter evenly in mug.

In a small bowl, melt butter. Add rememaining ingredients, stirring until well combined. Spread on top of batter in mug.

Cook about 90 seconds in the microwave. (Time will vary by microwave.) The top will look barely set. Eat while it’s warm.

    Sorry to hear you are not at your best emotion wise – the breakfast seems healthy if a little tricky!

      Not tricky at all. Just mix in the mug and the topping in a small bowl. Combine and nuke. 🙂 Thanks.

        here’s the one i do, with nutella. it’s better yet with homemade nutella, but i confess to getting lazy now that the kids have moved out, and going the easy route.

        Ingredients

        Original recipe makes 2 servings
        1/4 cup self-rising flour
        1/4 cup white sugar
        1 egg
        3 tablespoons vegetable oil
        3 tablespoons milk
        2 tablespoons unsweetened cocoa powder, or more to taste
        2 tablespoons chocolate-hazelnut spread (such as Nutella®), or more to taste
        1/2 teaspoon salt
        1/2 teaspoon vanilla extractDirections

        Stir self-rising flour, sugar, egg, vegetable oil, milk, cocoa powder, chocolate-hazelnut spread, salt, and vanilla extract together in a large mug until batter is smooth.
        Cook in microwave oven on full power until the cake has risen in the mug and is set in the center, 1 1/2 to 2 1/2 minutes.

        it’s VERY rich and gooey, and even a sugar addict like me has a hard time with it.
        but before the ‘omg i’ve killed my stomach’ sugar OD takes over it’s ecstatic.
