Recipe: Bacon Hasselback potatoes
Description: “Can be used with any cheese, we prefer a medium cheddar.”
russet potatoes, one per person
cheese slices, small enough to fit inbetween potato slices
bacon slices, 3 half slices per potato
Slice each potato almost completely through in 1/4 slices and cover completely in plastic wrap. Do this for each potato. Microwave until completely cooked.
Preheat oven to 450 degrees F.
Remove potato from plastic wrap. Put a slice of cheese between every other cut. Wrap potato in bacon. Repeat with each potato.
Bake potatoes in an oven safe pan 15-20 minutes or until bacon is crispy. Serve.
