Recipe: Mac & Cheese – Homestyle

NOTES : I quarter pepperoni rounds, then wrap them in a paper towel and microwave them for 30-45 seconds. Long enough to cook the excess oil out, but not so long that they become hard.

2 Tablespoons butter
4 garlic cloves — minced
1/2 cup chopped onion
1/3 cup chopped red bell pepper
1 cup diced ham
1/4 cup diced & rendered pepperoni — see note
8 ounces cream cheese — diced
1 cup milk
8 ounces cheddar cheese — grated
2 cups elbow macaroni — uncooked (roughly)
pepper

Cook macaroni.

Over medium heat, melt butter in a large skillet. Saute veggies and ham. Stir in cream cheese, milk and pepperoni. Once the cream cheese is melted, stir in cheddar cheese. If sauce is too thick, stir in additional milk 1T at a time.

Stir in cooked macaroni until coated. Serve with pepper.
