Cilantro Pesto Chicken Sandwich
This was our “Cinco De Mayo” dish for the day.
Pesto
1 cup cilantro, leaves and stems — packed
2 garlic cloves
1 small jalapeno
1 tablespoon lime juice
dash kosher salt
olive oil
Chicken
shredded chicken
shredded cheddar cheese
mayonnaise
chili powder
diced onions
bread — toasted
In a food processor, mince cilantro, garlic, jalapeno, juice and salt. Drizzle in olive oil until a paste forms.
In a bowl add remaining ingredients, except bread, and mix. well.
Place chicken mixture on a slice of toast. On another slice, spread pesto thinly. Form a sandwich and serve.
