Brownies and cookies

Today I am in the mood for chocolate and other fattening things.  Saw a recipe for brownie cookies (aka brookies).  The recipe was pretty much my brownie recipe divided by 2, so I used it instead of the one I found.  Problem is that the cookies are more time consuming to make than the brownie recipe so I doubt I will do it again because when I want brownies I want them yesterday!

Best Brownies

Ingredients

1/2 cup unsalted butter
4 ounces unsweetened baking chocolate — chopped
1 1/2 cups sugar
2 teaspoons vanilla
2 eggs — beaten
1 cup flour
dash salt
1/4 cup choppped nuts — optional

Preheat oven to 400 degrees F.

In a large saucepan over low heat, melt butter and chocolate. Stor constantly. When melted, remove from heat and stir in sugar, vanilla and eggs. Add in flour, salt and nuts (if using).

Spread in pan and bake for 18-20 minutes or just until the brownies START to pull away from the sides of the pan, DO NOT OVER BAKE.

Cool in pan for 5 minutes before cutting and removing.

For brownie cookies:

Halve the recipe. Chill in frigerator until batter is COLD.

Preheat oven to 350. Drop rounded teaspoons of batter on to cookie sheet. Bake for 10-13 minutes or until the cookies have a crackly surface. Be careful to not over bake.

Cool on cookie sheet for 5 minutes then remove from pan and cool on cookie rack. Made about 20 cookies.
